Happy Saturday! It's Labor Day weekend, which means school is either just around the corner for you, or it's the first little break you've had since beginning the year. I don't know about you, but I felt the first crispness of the coming fall in the air this morning, which has me already thinking ahead to all the warm and hearty comfort food favorites I'll be making this fall. I think today's recipe is a perfect dish for a bit of luxury in your weekly meal plan, and it bridges the gap nicely between the summer and the fall!
This week, I'm sharing my take on Whole Food, Real Families' creamy chicken and kale gnocchi. A friend of mine shared a photo of this dish on her Facebook page, and when I saw it, I immediately asked for the recipe because it looked SO AMAZING. After she sent it, I added the ingredients to my weekly grocery list and made it that night. It did not disappoint! I decided to make it with spinach instead of kale because we had a bag in the refrigerator that needed to be eaten. It was perfect.
This dish makes a great "splurge" for the weekend, or its ingredients can be easily prepared ahead of time to save on prep time for a weekend meal. I hope you'll try it and let me know what you think!
