This week, I'm sharing my take on Whole Food, Real Families' creamy chicken and kale gnocchi. A friend of mine shared a photo of this dish on her Facebook page, and when I saw it, I immediately asked for the recipe because it looked SO AMAZING. After she sent it, I added the ingredients to my weekly grocery list and made it that night. It did not disappoint! I decided to make it with spinach instead of kale because we had a bag in the refrigerator that needed to be eaten. It was perfect.
This dish makes a great "splurge" for the weekend, or its ingredients can be easily prepared ahead of time to save on prep time for a weekend meal. I hope you'll try it and let me know what you think!
Chicken and Spinach Gnocchi
3 tbsp extra-virgin olive oil
2 shallots, peeled and sliced
2 cloves minced garlic
1 lb chicken breasts, shredded
8 oz spinach, washed
1 lb gnocchi (can usually be found on the pasta aisle)
2/3 cup chicken stock
1/2 c heavy cream
salt and pepper, to taste
